Growing prime lambs is similar in many ways to producing fine wines. The climate, soil type and pastures have a great deal to do with the quality and taste of the product. When producing prime lamb the conditions should not be harsh, nor should they be over indulgent.

The Riverina in NSW is renowned for producing highly sought after prime lambs with extremely high muscle yield and eating quality that is second to none. The mixture in the Riverina of predominately red loam soils with some heavier clays, combined with a mild climate and a moderate rainfall make this region ideal for prime lamb production and all Mirrool Creek Lamb is produced in this region.

The stock supplied to Mirrool Creek Lamb are supreme quality second cross lambs. These lambs are by a Poll Dorset ram out of a first cross ewe. The lambs are free range pasture fed and all Mirrool Creek Lambs must meet an extremely high performance level prior to processing. A strict policy of “low stress” handling, especially prior to processing combined with the great care that is taken to ensure that each carcass is optimally aged and then meticulously packaged enables Mirrool Creek Lamb to provide a product of exceptional quality and consistency.
