Growing prime lamb is similar in many ways to producing fine wine. The climate, soil type and pasture have a great deal to do with the quality and taste of the product. When producing prime lamb the conditions should not be harsh, nor should they be over indulgent. The Riverina in NSW is renowned for producing highly sought after prime lamb with extremely high muscle yield and eating quality that is second to none. The mixture in the Riverina of predominately red loam soil with some heavier clay, combined with a mild climate and a moderate rainfall make this region ideal for prime lamb production and all Mirrool Creek Lamb are produced in this region.
The stock supplied to Mirrool Creek Lamb are of supreme quality second cross lambs. These lambs are by a Poll Dorset ram out of a first cross ewe. Lambs that meet an extremely high performance level prior to processing are selected for Mirrool Creek Lamb. The lamb is free-range pasture finished and must be between 22kg-24kg carcass weight with a fat score average of 3 and dry aged for a minimum of 6 days. This coupled with the strict “low stress” handling policy enables Mirrool Creek Lamb to achieve the sought after MSA grading.
